Sometime ago, someone said something that seemed right and applies here.
The moderates (these cherry picking Christians you speak of) are the group from where the fundamentalists draw people... and draw legitimacy.
The moderates would still retain the whole text as it is, because they will be the first to tell you that it needs to be interpreted in context. Even if there are people who won't do this (the fundamentalists), the text is holy and cannot change. And this attitude makes moderates somewhat responsible for fundamentalists.
So, debunk the moderate position and the fundamentalist falls with it. Attack the fundamentalist, and soon others will take their place.
But, of course, it's so much easier to attack a philosophically void position than one that had centuries of thinkers shielding it from reason.

True, they are part of that problem.

That would be lovely, but I think the moderates' position is - oh so coincidentally - impenetrable. Their notions of gods and what the bible says - or hints or indicates - is so flimsy and insubstantial there is no way to pin it down.
