So I think that we have verified that Peanut butter is a good mouse bait. The big question is, does crunchy or smooth work better?
I suppose there's more chance of them choking to death on crunchy.

Simply because it's easier to spread when you're lathering rat-bait bricks in a dark, dusty, cramped roof space. Your nut-butter spreading situations may vary. I was helping clean out a garage today and we found six baby mice.
The big African dude I was with was squealing and dancing around on his tiptoes. :-) I took them out and stomped them into the garden...nice and quick. Mum was never coming back and I got plans for her anyway. This will be an ongoing problem as these clients leave food all over the house. I use one of these humane mouse traps. It's totally painless for the mouse,
and doesn't need any bait, and stays remarkably clean. —Only problem being that we seem to have even more mice around lately. I'm a creationist; I believe that man created God.

Peanut hulls don't spoil and smell just as good to the vermin.
Bacon is the best bait for mice. Peanut butter is for squirrels. I hate both. I don't use snap traps for mice because I have cats and I would never take a chance of injuring one. I use a strange little grabber for the mice and voles. It can hold a mouse, but a cat can just shake it off (though I set them in places where my cats are VERY unlikely to get at).
Different brand, but same concept.
Never argue with people who type fast and have too much time on their hands...
