What's the counter password? I don 't want to have an embarrassing encounter. "Same to you" type responses are the virtue signals.
What is wrong with a simple “Back at you”?

I'm supposed to provide an "acceptable" response (like "Back at you") that shows I believe the same things they do. I decline to do so.

If I hear this one more time....
I was the kid in the family who never ate.....or I hardly ate much. My parents were alarmed when I was 4 years old and didn't think I'd make it to my 5th birthday and I remember my mother kept saying
"Think of all the starving kids in India."
I was told India was on the other side of the world but even as a 4 years old I realized that my not eating my carrots sitting directly in front of me on my plate in California was NOT going to help a starving kid in India.
But guess what? When my kids were little and didn't eat what was on their plates I tried the same stupid trick. It didn't work.

I'm with GS on this, the expectations from "have a blessed day" or other faithful expressions aren't my responsibility. If someone gets hurt by me replying "It's cool", that's not my problem.
But it's clear that with many of them who offer those sorts of well-wishes (at least around here), there's an expectation of a sympathetic reply, and while I could pull it off, I just won't do it. Most folks seem fine with my answers, so it's not an issue.

My mother never had that problem with me. I grew up in a poor household and it seemed that I never got enough to eat. My younger brother was the picky eater. There were many times in which he would pass whatever he didn't like on his plate over to me when Mom or Dad weren't looking and I'd quickly gobble it down.

There are circumstances that I'd find that important. I'd rather die of a heart-attack onstage in front of an audience than, say cancer or drowning or whatnot.
